Recently named as one of the top 10 superfoods of the year in the U.S., goji berries have actually been used in Asian countries for thousands of years in hot soups and desserts. Traditionally, Chinese prefers to eat goji berry warm and cooked.. BUT to break that tradition, I decided to make it into a low calorie refreshing summer treat!
Inspired by a drink I found at Wholefoods, I mixed elderflower syrup to add a floral aroma to the superfood drink. Hope you enjoy this delicious drink as much as I did!
Goji Berries Elderflower Slush
|1 tablespoon of goji berries
Juice of 2 lemon
4 table spoon of elderflower syrup
2 cup soda water
Honey to taste
mint leaves as garnish
|1. Soak goji berries in warm water for 30 minutes
2. Combine goji berries, lemon juice, elderflower syrup, soda water, and honey in a medium bowl.
3. Freeze the mixture for at least 4 hours
4. Pour slush into glass, garnish with mint leaves and enjoy!
