Lychee – another super food I wish could be available all year round. Sweet and fragrant, it is a healthy “candy” everyone loves, especially girls. One of the emperors from Tang Dynasty even used lychee to win the heart of the love of his life, Yang Gwai Fei. From then on, lychee often symbolizes romance and love in Chinese culture.
Beside the romantic symbolism of lychee, it also has tremendous health benefits. It contains phosphorous, calcium, magnesium, and protein that may protect your body against cancer! Not to mention it is low in calories, contains no saturated fats or cholesterol.
Now, let’s explore the taste of summer love with this super easy-to-make lychee coconut ice pom pom recipe.
Lychee Coconut Ice Pom Pom
|15-16 fresh lychee
3/4 cup organic coconut milk
1/2 cup agave nectar (sweetener)
Juice of 1/2 lime
Pinch of lime zest
|1. Peel and pit the lychees. Chop them into chunks. Combine it with agave nectar and lime juice.
2. Boil the lychee mixtures on medium heat for 4-5 minutes. Set aside and let it cool. Remove brownish inner membrane from the flesh after its cooled.
3. Blend coconut milk with lychee mixture with a high power blender. Pour them in ice ball mold and freeze for 3 hours.
4. Put cake pop sticks in ice ball mold after 3 hours. Freeze over night.
5. Remove from freezer. Garnish with lime zest and serve!
