How far can you go with a bowl of instant ramen?  I went pretty far with it last week.  What normally takes 3 minutes to cook, took me 3 hours instead.  Yes.  I spent 3 hours on preparing this ramen.  The result was great!  It was worth the time!

Let me explain why it took so long.  Instead of using boring tap water, I made my own seafood broth from scratch.  When I learned how to make this broth at a local culinary school, the instructor said the shell and heads of any seafood are just the same as bones we use to make broth.  So don’t throw away shrimp shell or heads next time you buy shrimps.  Save them for broth.  The result can be spectacular!


Finish the dish with a little bit of seaweed and sesame seeds on top add extra umami! Enjoy!

Sea Urchin Ramen with Crab Meat

  • For Shrimp Broth:
  • 10 shrimp, heads removed and roughly chopped
  • 2 tablespoons olive oil
  • 1 small shallot, chopped
  • 1 small celery, chopped
  • 1 small carrot, chopped
  • 2 cloves garlic, smashed
  • 2 tablespoons tomato paste
  • ¾ cup dry sherry wine
  • 1 bay leaf and 3 sprigs of thymes
  • 2 cups water
  • For the pasta sauce:
  • 6 ounces fresh sea urchin
  • 4 tablespoons butter, softened
  • 1 teaspoon piment d’espelette
  • sea salt to taste
  • 1 cup shrimp broth (see above)
  • To finish:
  • 2 bags of instant noodles
  • piment d’espelette to taste
  • Shredded sea weeds
  • sesame seeds
